<p>This is one of the quickest and tastiest salads and if you use all the different colored peppers, yellow, red, orange and green and serve in a glass dish it can look magnificent.</p>

<li><span>How to:</span></li>
<li>Grill or BBQ the peppers until the skin turns black</li>
<li>Place in a bag or bowl to steam through enough to make the skin easy to remove.</li>
<li>Slice the peppers</li>
<li>Add salt and pepper to taste,</li>
<li>Sprinkle Olive oil ( or avocado oil is nice too) and vinegar ( I use cider vinegar)</li>
<li>Serve with herbs of your choice, spring onions, chillies or you favorite things !</li>

			<content:encoded><![CDATA[<p>Super fast quick and easy to make salad that is healthy and delicious and is also good to take for lunches as a salad or to fill a bread roll or Pita pocket  for a quick healthy lunch on the run.</p>
<ul>
<li>Two large carrots &#8211; grated</li>
<li>Handful of raisins</li>
<li>1/2 a tin of pineapple pieces (drained)  or use fresh if available</li>
<li>Sprinkling of cold pressed olive oil</li>
<li>Juice of one orange (lemon is fine too if you prefer more tart taste)</li>
<li>Seasoning to taste &#8211; salt and pepper, gomasio or your choice of seasoning</li>
<li>Combine all ingredients</li>
<li>Stir through and let stand for at least half an hour &#8211; better longer</li>
<li>Garnish with finely chopped Italian parsley or chopped chives</li>
<li>Extra delicious with pine nuts added</li>
</ul>
<p>We make this often and its great with cold meats, or a crusty loaf and green salad and optional  extras can be added  like cashew nuts or  swapping  the pineapple for orange segments or exchanging  the orange juice for pineapple juice.  Use this recipe for a starting point and be experimental and see how many favorites you can come up with.</p>

<p>Eat green and stay healthy and lean, that&#8217;s my motto. I&#8217;ve always loved healthy salads. Ever since my late father&#8217;s medical condition precluded his enjoying the greens he also loved, I&#8217;ve never taken them for granted and enjoy them even more. My favorite salad mainstays come from Earthbound Farm that began 25-years ago as an organic backyard garden in Carmel Valley, California. Now I live just a few miles away in Carmel, long committed to organic for me and the planet. You can find their produce in Whole Foods, Trader Joes, and many other locations, and can even buy it farm direct: <a href="http://ebfarm.com/" class="autohyperlink" title="http://ebfarm.com/" target="_blank">ebfarm.com/</a></p>
<p>In 2009 alone, Earthbound&#8217;s 33,000 acres avoided the use of over 305,000 pounds of toxic pesticides, 10.3 million pounds of synthetic fertilizers, and conserved 1.6 million gallons of petroleum by avoiding the use of petroleum-based pesticides and fertilizers. With sustainability the goal they use 100% post-consumer recycled PET for plastic salad containers and 99% post-consumer recycled corrugate for shipping cartons.</p>
<p>With the local deer sporting their new autumn and fall antlers, and beautiful red Pyracantha berries reminding me how they centered our Thanksgiving dinner tables growing up, this is a beautiful looking and healthy salad is perfect for fall and winter, alone or try it paired with artisan bread and soup.</p>
<p><strong>Carmel-by-the-Sea Roasted Pear, Goat Cheese and Candied Pecan Salad</strong></p>
<p>1 package of spring mix salad greens<br />
2 unpeeled pears<br />
1/2 c of dried cranberries<br />
1/2 c of candied pecan pieces<br />
4-6 oz goat cheese log<br />
1/4 c apple juice<br />
3 T brown sugar<br />
1 T white wine vinegar<br />
1 T extra virgin olive oil<br />
Salt and pepper to taste</p>
<p>Cut the pears into fourths length-wise and core. Place in a baking dish. Combine the apple juice and brown sugar and pour over the paces. Bake 20-30 minutes until they are tender, basting occasionally with the juice. Remove to a plate and reserve ¼ cup of the juice mixture.</p>
<p>Whisk the reserved apple juice and white wine vinegar in a small bowl, whisk in the olive oil, season with salt and pepper to taste. I use sea salt and no pepper. Toss this dressing together with the greens in a salad bowl. Crumble in the goat cheese and mix throughout with a couple of light tosses. Divide onto four plates. Sprinkle each with the dried cranberries and candied pecans. Cut the pears into slices and arrange. Bon appetit.</p></div>

<p>Many of us are so busy that we don&#8217;t have the time to prepare fresh and delicious meals anymore. The recipe I am sharing in this article is very simple and time saving. I got this from a friend of mine who served this broccoli salad in one of our work-related-potlucks. Everyone loved it that it was gone in minutes! I am not a very good cook but every time I attend a gathering that involves food, I always bring my broccoli salad. Amazingly, it is always one of the first dishes to disappear!</p>
<p><strong>INGREDIENTS NEEDED:</strong></p>
<p>2 bundles of fresh broccoli, 1 onion, 1/2 cup of raisins, 12 slices of (cooked) bacon.</p>
<p>For the dressing:</p>
<p>1 1/2 cup of mayonnaise, 1/2 cup of sugar, 3 tablespoons of vinegar</p>
<p><strong>MAKING THE SALAD:</strong></p>
<p>1. Wash the broccoli thoroughly and chop them into bite sizes, and place them on a clean dish/salad bowl.</p>
<p>2. Wash the onions thoroughly and slice or chop it into small pieces, then mix it with the broccoli.</p>
<p>3. Add the raisins and mix it with the rest.</p>
<p>4. Break the 12 slices of bacon into small pieces and them mix it with the rest.</p>
<p>5. Mix the dressing ingredients thoroughly in a separate bowl to make a dressing. Pour and mix the dressing evenly with the broccoli and the rest.</p>
<p>6. Cover your new broccoli salad with a plastic wrap and keep it refrigerated until ready to serve.</p>
<p>7. Enjoy your new delicious broccoli salad (by yourself or with friends and loved ones!)</p></div>
